Since my picky eater is gone for a week (it’s winter break here) I decided to make dishes that he probably wouldn’t care for, but that Nick and I would enjoy. I am especially looking forward to trying a few new things.
Tonight’s corned beef and cabbage was actually on last week’s menu, but because Alex was leaving Friday morning, I decided to leave it for this week. I knew he probably wouldn’t enjoy it. I thought it would be fun to try some kind of Irish bread with my corned beef so I found a recipe from allrecipes. com. I can’t wait to try it!
Sunday: Corned Beef and Cabbage with Irish Soda Bread
Monday: Kittie Chicken, brown rice and roasted asparagus
Tuesday: Pioneer Woman’s Enchiladas
Wednesday: Jane Deere’s Pan Seared Shrimp and Four Cheese Ravioli with Vodka Cream Sauce
Thursday: Your Home Based Mom’s Lemon Chicken
Friday: Turkey and Black Bean Chili from Mr. Sunday’s Soups cookbook, with cornbread
Saturday: I didn’t get this far. I figure after a week of new recipes I’ll be ready for take-out or pizza delivery.
What are you cooking this week? I’m finding that I need a little more inspiration lately. Every week as I’m making the menu I have several cookbooks out as well as my laptop as I’m digging for new recipes.
We had decent weather last week. I even had the windows open for about 30 minutes one day. Just enough to air the house a bit. Yesterday the temperatures started dropping and the wind started whipping. It’s VERY cold today once you factor the wind chill. We even have snow in the forecast tonight. 2-4 inches. Oh my! When will it end???

I do bi-weekly menus. I keep planning most of our meals around our grill, and I am trying to stick to that, since it's really easy to cook healthy if you grill - otherwise I'd fry. :)
Sounds yummy as always. I seem to get fooded out during these long cold months and my brain stalls on what to make. I'm ready for warm sunshine and grilling.
